I always cook a extremely huge turkey for Thanksgiving and have plenty leftover. I generally try to eat sliced meat for two days and only have one very good recipe for leftovers – turkey lasagna. Any other great recipes?

And I love turkey divan casserole too.
I take the left over stuffing and press it into the bottom of a baking dish. Then I bake it, making a crust. I slice and dice leftover turkey and reheat it in the leftover gravy. I pour that over the stuffing and top it with the leftover mashed potato’s and bake until the potato’s brown. It makes a fantastic casserole, and the kids loved it.
I like the leftover sandwhiches. If you have some stuffing of dressing make it into a patty and heat it in a skillet, heat up your turkey also put it on some bread (toasted or not) Put all of it on the bread with a slice of cranberry sauce and enjoy!!

I have a couple. Turkey enchiladas are absolutely wonderful. Also – whole grain rice with sauteed veggies like bell pepper and onion with turkey. The key is the seasoning – I use vege-sal (which you can get from most health food grocers). I’ve linked the recipes below, along with a couple of other ideas.

TURKEY ‘N STUFFING BAKE
3 C prepared stuffing
2 3/4 oz fried onions
1 can cream of celery
3/4 C milk
1 1/2 C cooked tukey
’10 oz peas, thawed
Combine stuffing & half can onions. Spoon mixture into a shallow 9″ baking dish. Press mixture to form a shell along bottom & sides of pan. Combine cream of soup, milk, turkey & peas, pour into stuffing shell. Bake covered 350 F for 30 minutes. Top with remaining onions. Bake uncovered 5 minutes longer.
I just made turkey salad (like tuna fish salad or chicken salad) with mayo, onion, a little lemon juice, and some relish. It’s pretty good, and I actually liked it better than tuna fish salad
