4 days primarily but some folks get the entire week off .
Guess what? The friday through Sunday following thanksgiving is hella insane with the kickoff of the xmas searching season. Department Stores are generally closed on thanksgiving day, but because there are a lot of tourist that occur, most of the tourist points of interest are open up.

Usually Thursday and Friday of Thanksgiving week. Not much is going to be open on Thanksgiving, certainly not department stores or tourist sites. NYC will be mobbed, due to the parade and the shopping on “Black Friday” and the beginning of the Christmas season. To “avoid crowds”, don’t go to NYC on Thanksgiving weekend. Hotels will be at their priciest from Thanksgiving until after New Year’s.
Don’t know about LA, crowd-wise. But the days off, closings, etc. will be the same as in NYC.

The official school holidays in LA are Thursday and Friday, but some schools (especially back East) have the whole week off, and those folks like to come to LA.
The only thing I would add is this: If you want to avoid crowds, stay at home those days. Disneyland, Universal, and other theme parks are mobbed from Thursday-Sunday, and pretty crowded all week. Tourist destinations will definitely be open, since there is money to be made.
Avoid shopping malls like the plague on the Friday after. Freeways get backed up for miles around the malls, and the streets are a zoo.
That’s why I do beach camping on Friday, and shop online!
Typically schools and workplaces get the day before Thanksgiving (Wednesday) off and sometimes the day before that (Tuesday) but rarely the Monday as well. The Friday is almost always given off as well because it is an unofficial holiday called “Black Friday,” considered the start of the Christmas shopping season, on which stores are not only open but also often hold large sales.
In New York this year many universities do not officially get the day before Thanksgiving off (I know mine doesn’t) though classes may be cancelled anyway. Either place will be crowded just because they are both big cities, but New York will be more crowded because it’s more densely populated and because of the Macy’s Day Parade, which is a popular attraction.
